Ellis Barrie Hosts Tasting Menu at Restaurant 1539, ChesterRestaurant 1539

Celebrity chef and restaurateur Ellis Barrie treated guests at Chester's Restaurant 1539 to a special tasting menu this week.
Those who attended over the two evenings where welcomed with Laurent Perrier Champagne on arrival, followed by a creative eight-course offering.
Ellis who has featured twice on the Great British Menu, and is owner of the award-winning Marram Grass in Anglesey and soon to be launched Lerpwl in Liverpool, handcrafted the creative menu to feature plenty of produce from the North Wales region, including his own garden in Anglesey.
The first course to kick-start the evening was a taste sensation of Menai oysters, with lime pickle, sheep's yoghurt, curried raisins and puffed wild rice. Dishes to follow included, 'Wyau Ynys Mon' which translates to 'Anglesey Eggs' and featured egg shells filled with locally sourced Hafod cheddar, egg yolk, potato mousse and crispy leeks. Along with 'Y Cwt Caws', Welsh goat's cheese with textures of beetroot and flavoursome Amlwch crab with celeriac.
The highlight of the evening's menu was home reared pork, where the succulent meat was perfectly complimented by the sweetness of Anglesey Jerusalem artichoke and a yeast puree.
Chocolate cremeux served with sesame seed tuille and poblado coffee perfectly concluded the gastronomic experience for the evening.
Ellis, who is soon set to feature in a revise to the BBC classic 'Ready Steady Cook' said:
